The Italians have brought the world its grandest cheeses: parmigiano reggiano, buffalo mozzarella, and ricotta, to name a few. Here's a highlight from a recent free cooking school workshop featuring three you might not be so familiar with:

Taleggio and Pear Panini

8 slices rustic bread
1/4 cup olive oil
8 ounces Taleggio cheese, sliced
2 large pears, cored and cut into thin wedges
2 tablespoons honey
Pinch salt
Pinch freshly ground black pepper
3 ounces arugula or spinach

Preheat the panini machine. Brush the bread on both sides with olive oil.

Make the sandwiches by dividing the cheese among the bread. Cover the cheese with pear slices and drizzle with honey. Sprinkle with salt and pepper. Top with a handful of arugula. Cook until golden and cheese is melted.
